Ingredients


Fresh blackberries 200g


Unsalted butter 110g


Sugar 145g


Baking powder 10g


Baking soda 1g


Salt 1g


Cinnamon 2g


Egg whites 55g


Blackberry cake preparation


1. First, use a blender to puree the fresh blackberries until the surface is smooth and grain-free.


2. In a mixing bowl, place the butter, sugar, baking powder, baking soda, salt and cinnamon in order.


3. Mix well on low speed, then turn the mixer to medium speed and beat until puffed, about five minutes on medium speed.


4. Stir in the egg whites in batches and mix well.


5. Using a rubber spatula, scrape the mixture off the mixer and around the edge of the mixing bowl and continue mixing.


6. Line the bottom of the cake mould with baking parchment and pour the batter into the prepared cake mould, using a rubber spatula to smooth out the batter.


7. Preheat the oven to 180°C. Place the battered cake moulds on a baking tray and bake in the oven for about 30 minutes, then remove from the oven and allow to cool, for about an hour.


8. Run a butter knife along the edge of the cake mould to separate the batter from the mould, peel off the baking parchment from the bottom and place it on a plate.


9. Garnish with fresh blackberries and you have a blackberry cake.

Step 1: Separate the egg whites and yolks into a clean, water-free bowl. Add the milk, corn oil, and 15g of granulated sugar to the egg yolks and mix well with a hand whisk.

Step 2: Add a few drops of white vinegar to the egg whites, then add the sugar in three batches and beat until stiff peaks form.

Step 7: Allow the cake to cool thoroughly before unmoulding.


Step 8: Spread a layer of cream on top of the cake, then spread it with the strawberries and custard.
